ArmInfo. Armenian Ashtarak Kat Company restarts production of Roquefort cheese in Armenia. As the chief specialist in diary sector, PhD in Technical Science Konstantin Obyedkov noted Roquefort cheese was produced in Armenia between 1940 and 1990. Ashtarak Kat Company has initiated restarting the production of blue mold cheese of Roquefort type under "MolderBlue" brand.
The idea of restarting production of cheese with blue mold came in 2014. In 2015 the trial lot of cheese was produced. Ashtarak Kat Company studied sales markets and reasonability of its production. As the survey demonstrated these type of cheese has great demand and has big potential for sale both in Armenia and abroad.
"The main advantage of our technology of Roquefort production is that it is produced from ecologically clean milk received from cows grazing on Alpine meadows of Sevan zone, which are 2000m above sea level. Milk received in such conditions has great biological value, is rich with vitamins and minerals", the specialist noted.
Comparative evaluation of the quality of the cheese demonstrated that it does not yield to the best foreign samples of Roquefort. The new cheese will be quite affordable. In the nearest future industrial production will be launched at an amount of 2 tons per day. The company is sure that "Molder Blue" will become a competitive product.
